Potato & Saltfish Choka

Description

This is a great dish that can be eaten with roti or bake.

  • 8-9 medium-large potatoes (peeled)
  • 1 pkg. 340g of boned saltfish
  • 1 medium onion (diced finely)
  • 2 medium tomatoes (diced medium)
  • 2 green onions (chopped finely)
  • 1 whole Jamaican pepper (grind with garlic and set aside)
  • 2 cloves of garlic
  • 8 tablespoons oil
  • 2 teaspoon salt
  • 1 teaspoon black pepper

Methods/steps

  Salt fish Prep:

  1. Wash saltfish bits, add to a bowl of water and let sit for 30 mins.

  2. In a deep dished pan add 4 cups of water, add drained saltfish and boil for 15 minutes.

  3.  Drain and set aside.

     

  4. Peel and cut potatoes into 4 - 6 pieces (depending on size)

  5.  Fill a large pot with enough water to cover potatoes completely, add 1 tsp salt and bring to a boil.

  6. Add potatoes to boiling water and boil for 30 minutes, and drain

  7.  In a large pot or wok turn heat on to medium-high

  8.  Add 5 tablespoons of oil

  9.  Add saltfish and half of all cut & chopped ingredients

  10.  Add 1 teaspoon black pepper to fish

  11.  Mix and fry for 5 minutes

  12.  Add 3 tablespoon of oil & remainder of cut ingredients

  13.  Fry for another 2 minutes & reduce heat to medium

  14.  Add half of strained potatoes and use potato masher to mash & mix

  15.  Once mashed, add remainder of potatoes and mash & mix again

  16.  Mix and add 1 teaspoon salt

  17. Turn heat off, remove potato choka from pot and serve in bowl.
