Quick Mackerel and Potato

Description

Quick and easy! You can enjoy this with roti or bake.

  • 1 can (425g) mackerel in tomato sauce
  • 2 tbsp olive oil
  • 1 small onion (chopped)
  • 1 green onion (chopped)
  • 2 medium potatoes (peeled)
  • hot pepper sauce (optional)
  • 1 tomato (chopped)
  • ¼ cup water
  • salt and pepper to taste

Methods/steps

  1. Using a large frying pan, heat the oil over med-high heat.
  2. Add onions and fry for 1 - 2 minutes
  3. Cut the potatoes vertically, slice them thinly and add in the pan with the onions
  4. Add tomato and hot pepper (optional) and cook for 3 minutes (stirring often)
  5. Add water and continue cooking potato until soft (10-15 minutes)
  6. Add mackerel (break into smaller pieces using a fork) and cook for an additional 5 minutes
