Quick Mackerel and Potato

- 1 can (425g) mackerel in tomato sauce
- 2 tbsp olive oil
- 1 small onion (chopped)
- 1 green onion (chopped)
- 2 medium potatoes (peeled)
- hot pepper sauce (optional)
- 1 tomato (chopped)
- ¼ cup water
- salt and pepper to taste
Methods/steps
- Using a large frying pan, heat the oil over med-high heat.
- Add onions and fry for 1 - 2 minutes
- Cut the potatoes vertically, slice them thinly and add in the pan with the onions
- Add tomato and hot pepper (optional) and cook for 3 minutes (stirring often)
- Add water and continue cooking potato until soft (10-15 minutes)
- Add mackerel (break into smaller pieces using a fork) and cook for an additional 5 minutes
