Vegetarian (eggless) Sponge Cake

- 1 1/4 lb Self Raising flour
- 1 lb butter
- 1 lb White sugar
- 1 teaspoon vanilla essence
- 1 can evaporated milk
- A pinch of salt, nutmeg & cinnamon
- Tsp. of grated lemon/lime (optional)
Methods/steps
- Cream butter and sugar using a mixer.
- Add slowly milk.
- Add essence, salt, nutmeg & cinnamon
- Fold in flour slowly. Do not over mix.
- Pour mixture in a 12x9 inch greased baking pan.
- Bake in oven at 350 deg F for approx. 1 hour.
- Enjoy.

Additional Tips
Dry fruit can be added.
