Vegetarian (eggless) Sponge Cake

Description

You would not miss the eggs in this cake :-)

Ingredients

Vegetarian
  • 1 1/4 lb Self Raising flour
  • 1 lb butter
  • 1 lb White sugar
  • 1 teaspoon vanilla essence
  • 1 can evaporated milk
  • A pinch of salt, nutmeg & cinnamon
  • Tsp. of grated lemon/lime (optional)

Methods/steps

  1.  Cream butter and sugar using a mixer.
  2.  Add slowly milk.
  3. Add essence, salt, nutmeg & cinnamon
  4. Fold in flour slowly. Do not over mix.
  5. Pour mixture in a 12x9 inch greased baking pan.
  6. Bake in oven at 350 deg F for approx. 1 hour.
  7. Enjoy.

Additional Tips

Dry fruit can be added.
