Coconut Ice (Sugar Cake)

Ingredients

  • 1lb. white sugar
  • ¼ pint water
  • 1c peeled & grated coconut  (only the white of the coconut)
  • ½ tsp essence
  • Pink/ red food colouring
  • Few drops of ginger powder (optional)

Methods/steps

  1. Boil sugar, essence, (ginger powder) and water together until it forms a light syrup.
  2. When bubbles the size of a small pearl appear, add grated coconut and stir until mixture thickens.
  3. When the coconut mixture comes away from the side of the pan easily, remove from the heat and beat with spoon for 3-5 mins.
  4. Pour half the mixture into a greased tray
  5. Add colour to remaining mixture in pan and stir until evenly  coloured
  6. Then pour over the first half.
  7. When cool, but not hard, cut into blocks.
  8. Store in an air-tight container.
  9. Enjoy.
