Pumpkin is botanically a fruit because it grows on a vine and contains seeds. It is classified as part of the squash family, therefore commonly referred to as a vegetable. Most parts of this vegetable is edible and used by many throughout the world. Nutritionally, pumpkin is rich in vitamin A and potassium. When it is ripe, it can be prepared by boiling, steaming, baking, roasting and pureeing it. In Guyana, pumpkin can be cooked with shrimp or salt fish, used in dishes such as soup or conkie.
